Paneer

Paneer is a cheese which is a staple of North Indian cooking. You could make it using the recipe shown below. If you have access to an Indian store, you will be able to find Paneer in the refrigerated section.

Quantity Ingredient
1 ½ pints whole milk
½ tsp white vinegar
½ tsp lemon juice


  1. Heat milk and stir constantly to prevent a layer of cream from forming on the top.
  2. Remove from heat when it boils and slowly add white vinegar and lemon juice (Alternately, you can replace the vinegar/lemon with plain yogurt). This sours the milk.

  5. Strain through a muslin cloth or a double layer of cheese cloth and squeeze out the whey (liquid).
  6. Hang to drip dry for 2-3 hours (or overnight). Then lay out the cheese in a rectangle in a tray and place a weight (the more the better, but at least 10 lbs) on it for about an hour.
  7. Cut it into 3/4" cubes

This is quite an intensive process and I would reccomend that you buy your paneer.
